Garlic and Herb Pasta - Really Easy...but shhhh...nobody will know that!

I want to apologize for not having a photo for this post! I made dinner at like 9:30 last night, so I wasn't exactly thinking about taking pics and stuff. BUT...I do want to share the recipe that I made because it was SO GOOD! AND....well, you heard the part that I made it, so that alone should tell you that it is WICKED CRAZY EASY to make! Fast and easy! The only way I cook! LOL! The rest, I leave to The Hubbums!

Here it is:

Ingredients:
1 lb. of whole wheat pasta (I used Rotini)
1 5 or 6oz bag of baby spinach (fresh)
1 jar of roasted red peppers, drained and sliced (about 1 cup)
1 4oz. container of Rotelle Garlic and Herb Light Cheese Spread (you don't have to use light, but why add calories if you don't have to, right?)

Steps:
Prepare pasta as per the instructions on the package (you know...like...boil it and stuff)
Reserve about 1/2 cuppish of the pasta water.
When pasta is ready BEFORE DRAINING add the bag of baby spinach.
Drain immediately.
Leave the pasta and spinach in the colander.
In the pasta pan, on low heat, add the rotelle and stir with a wooden spoon until it is all melty.
Add the 1/2 cuppish of pasta water to the cheese and stir until combined.
Add peppers and heat until everything is warmed.
Add a few twists of fresh ground pepper.
Add the pasta/spinach back to the pasta pan with the sauce in it and toss!
Serve with grated Parmesan.

THAT, my friends is WAY easier than pie! And it tastes SO good!

  1. Yum! Sounds so good! I love keeping a jar of red peppers around. There are so many things that you can use them for.
